 APPLE PANCAKES  WITH ICE CREAM
 
 
 Batter: 4 eggs, 1 cup of cornflour sieved together
                          with a teaspoon of baking powder, 1 pinch of salt, 3
                          cups of mashed unsalted ricotta, 3 cups of sugar, 1
                          teaspoon of grated orange rind, oil to line the frying
                          pan.
 Filling: 6 red apples (peeled and seeded), 1 cup of
                          seedless raisins, 1 cup of sugar, 1 cup of lime juice.
 Method: place all the pancake batter ingredients in a
                          blender and mix well. Fry the pancakes, melting a knob
                          of butter before frying each one.
 Filling: cook the apples with the lime juice and the
                          sugar until they fall. Add the raisins. Spread the
                          filling over the pancakes and roll them up. Sprinkle
                          with sugar and serve individually with vanilla ice
                          cream.
