BREAD PUDDING WITH APPLES 

Ingredients:
4 slices of bread with the crust removed
1/2 cup of skimmed milk, previously boiled
4  eggs
1/2 teaspoon of cinnamon powder
1/4 teaspoon of nutmeg
1 teaspoon of liquid sweetener (or 2 sachets)
1 medium sized peeled and seeded apple, cut into cubes
1/3 cup of raisins.

Method:

Cut the slices of bread into small 1.5 cm squares and bake in a moderate oven (170°) for 10 minutes, until golden. Place the bread squares in a dish and cover them with the scalded milk. Leave to soak for 15 minutes. In another bowl beat the eggs with the cinnamon, nutmeg and sweetener, until well beaten. Add the apple, the raisins and add to the bread mixture. Place in a shallow greased baking tin and bake in a bain marie in a moderate oven (170°), for 30 to 35 minutes. Test in the middle with a knife. When the knife remains clean the pudding is ready. Serve warm or chilled. Makes 8 portions.
