Chicken fillets with apple and ricotta

Makes 2 portions
Easy to make

2 chicken fillets (120 g each)
60g of apples
5 g of low calorie margarine
1 coffee cup of white wine
Salt, garlic, black pepper and lime juice

Ricotta Sauce:
1 egg white
15 g of low calorie ricotta
1 soupspoon of lime juice
1 teaspoon of grated onion
1 teaspoon mustard

Season the fillets with salt, pepper, garlic and lime juice; marinate for 2 hours.  Place a piece of apple on each fillet and roll them up. Use a toothpick to keep the roll closed. Glaze the rolls with margarine, put them in a small baking tin with the wine.  Heat the egg white over a bain marie and stir until it thickens. Mix the rest of the ingredients in the blender and then pour into a sauce boat.  Add the egg white to the sauce, stir well and serve with the chicken fillets.
